Patatas Bravas

Ingredients:
4 Waxy potatoes peeled & cubed
olive oil
1 onion sliced
2 cloves of garlic into a paste
1 jar of passata
pinch of brown sugar
pinch of Salt
1 tsp of smoked paprika
1 tsp of dried thyme
1 tsp of dried Oregano
1 tsp of Cayenne Pepper
1 bay leaf
Dash of Red wine
Aioli:
1 egg + 1 yolk
2 Cloves of garlic into a paste
2 tbsp sherry vinegar
S&P
1 tsp of Dijon mustard
squeeze of honey
juice of 1 lemon
250/300ml of oil
chives to serve
Method:
- Toss the prepared potatoes in olive oil & lots of Salt and Pepper
- Roast them in a moderate to hot oven for 40 mins or until crispy
- Heat some oil in a saucepan and throw in the onions, salt,pepper and garlic, reduce the heat and let them sweat until soft
- When they are soft add in all the dried herbs & give them a good MIX
- POUR in the wine followed by the Passata and sugar
- Let it simmer for around 10 mins
- Then you can blitz it or serve the way it is
- For the Aioli… put eggs, garlic, mustard, vinegar, seasoning, lemon juice & honey into a food processor
- Give it a good PULSE
- Then slowly drizzle the oil until it reaches your desired thickness
- When the potatoes are crispy put them in a serving dish topped with the tomato sauce followed by the aioli garnished with lashings of fresh parsley & chives
- EAT IT ALL………….. WITH CRUSTY FRESH BREAD
